- 2 (1 lb. 4 oz.) cans crushed pineapple
- 2 Tbsp. lemon juice
- 2 Tbsp. and 1 1/2 tsp. cornstarch
- 2 Tbsp. sugar
- 1/8 tsp. salt
- 1 tsp. vanilla
- yellow food coloring
Directions

1Drain pineapple, saving the juice.

2Add lemon juice to pineapple juice.

3In heavy saucepan, stir together cornstarch, sugar and salt.

4Gradually add pineapple juice.

5Mix until smooth. Place over medium heat and cook until mixture thickens and boils. Boil about 1 1/2 minutes.

6Remove from heat; add 6 drops of food coloring and vanilla.

7Let cool and refrigerate.

8Excellent on angel food cake.
