- 2 c. sifted flour
- 4 tsp. baking powder
- 1/3 tsp. salt
- 2 Tbsp. sugar
- 4 Tbsp. shortening
- 2 eggs
- 1/2 c. crushed pineapple, drained
- 1 Tbsp. pineapple juice (if needed to make a soft dough)
Directions

1Mix and sift dry ingredients; work in shortening with 2 knives.

2Add eggs well beaten (reserving a small amount of unbeaten white to brush over the top), fruit and juice.

3Toss on floured board.

4Pat and roll to 3/4 inch thickness as square and oblong as possible; cut into triangle shapes.

5Brush with white of egg, sprinkling generously with sugar.

6Bake in 450° oven 12 minutes.

7Makes about 16.
