Pineapple Sponge Pie

  • 1 c. sugar
  • 3 eggs, separated
  • 1 c. milk
  • 1/8 tsp. salt
  • 2 Tbsp. butter
  • 1 1/2 Tbsp. flour
  • 3/4 c. drained pineapple
  • pastry for 1 (9-inch) crust

    Cream butter and add beaten egg yolks.

    Combine flour, sugar and salt.

    Add dry ingredients to egg/sugar mixture.

    Add pineapple and milk and blend thoroughly.

    Fold in stiffly beaten egg whites. Pour mixture in an unbaked crust and bake at 425° for 8 minutes, then reduce temperature to 325° and continue to bake 30 to 35 minutes longer.
