Pineapple Upside Down Cake

- 1/2 stick butter (topping)
- 1 8 1/4 oz. can pineapple slices
- 3 eggs
- 5 Tbsp. pineapple juice
- 1/2 c. brown sugar
- 1 c. sugar
- 1/2 stick butter (batter)
- 1 c. self-rising flour
Directions

1Preheat oven to 350°.

2Drain pineapple, reserving liquid; halve slices.

3Melt 1/2 stick butter and brown sugar slowly in skillet.

4Beat eggs, add sugar and butter.

5Blend alternately, the juice and flour with the beaten eggs and sugar.

6Place pineapple in melted sugar and butter.
-
7Maraschino cherries (halved) may be place in hole of pineapple rings.

8Chopped nuts can be used also. Pour batter over the mixture and bake 30 to 40 minutes.
