Pineapple Upside-Down Cake

  • 1 box yellow cake mix
  • 1 large can sliced pineapple
  • 1/2 stick butter or margarine
  • 2 eggs
  • maraschino cherries
  • 2/3 c. pineapple juice, drained from pineapple (add water, if needed)

Directions

    Preheat oven to 350°.

    Melt butter in 9 x 12-inch glass baking pan.

    Arrange pineapple rings on bottom of dish.

    Put cherries in the center of each slice.

    In bowl, mix eggs, cake mix and juice. Pour on top of pineapple.

    Bake approximately 30 minutes or until knife comes out clean.

    Let set for 5 minutes.

    Turn upside-down on large platter.
