Pineapple Upside Down Cake

- 1/2 stick margarine
- 1/2 c. brown sugar
- 4 pineapple slices or 8 1/2 oz. can crushed pineapple, drained
- 1 pkg. Jiffy yellow cake mix
Directions

1Melt margarine in 8 x 8 x 2-inch pan or 9-inch layer pan. Sprinkle brown sugar over margarine.

2Spread crushed pineapple over brown sugar mixture.

3If using sliced pineapple, arrange over brown sugar mixture and place a half slice of maraschino cherry in center of pineapple slice.

4Prepare cake mix as directed on package, except substitute pineapple juice for water.

5Pour batter over pineapple mixture.

6Bake in 350° oven for 35 to 40 minutes. Cool cake 5 minutes before inverting over serving plate.

7Let stand 1 minute before removing pan.

8Serve warm.
