Pineapple Upside-Down Cake

- 1 yellow cake mix
- 6 Tbsp. margarine
- 1 c. firmly packed light brown sugar
- 1 (16 oz.) can pineapple slices
- maraschino cherries
- 1/4 c. chopped nuts (optional)
Directions

1Prepare cake batter using the box instructions.

2For more of a pineapple flavor, use the juice from the pineapple can instead of water.

3Cover the entire bottom of an electric skillet with 2 sheets of waxed paper.

4Turn to 250° and melt the margarine. Spread the brown sugar over the margarine.

5Place the pineapple slices in the skillet.

6Place a cherry in the center of each slice.

7Pour batter of cake on top of the pineapple.

8Place the cover on the skillet with the vent open.

9Bake 30 to 40 minutes. The cake will look moist and uneven.

10Turn onto serving plate. Slowly peel off wax paper.
