Pineapple Upside-Down Cake

- 1/3 c. butter
- 2/3 c. sugar
- 2 eggs
- 2/3 c. water
- 3 tsp. baking powder
- 1/3 tsp. salt
- 1/2 tsp. vanilla
- 1 1/2 c. flour (sifted)
- pineapple slices
- maraschino cherries (optional)
- pecan halves (optional)
Directions

1Cream butter.

2Separate eggs.

3Add beaten egg yolk and vanilla to butter.

4Sift together flour, baking powder, salt, and sugar. Add to first mixture.

5Alternate with water.

6Fold in stiffly beaten egg whites.

7While making cake batter, melt 5 1/2 to 6 tablespoon butter and 1 1/2 cup brown sugar in a skillet.

8When thick, pour into about a 9 inch pan.

9Add pineapple slices, cut or whole and decorate if you like with maraschino cherries and pecan halves.

10Pour batter over the fruit and bake 35 minutes at 350°. Turn upside-down on correct size plate so fruit is on top.
