Pineapple Upside-Down Cake

- 2 Tbsp. butter
- 1/2 c. brown sugar
- 4 canned pineapple slices, halved
- 1/3 c. shortening
- 1 1/4 c. self-rising flour, sifted
- 1/2 c. sugar
- 1/2 c. pineapple juice
- 1/2 tsp. grated lemon peel
- 1 egg
Directions

1Melt butter in an 8 x 8 x 2-inch pan.

2Stir in brown sugar. Arrange pineapple in mixture.

3Stir shortening to soften.

4Stir in dry ingredients.

5Add juice, lemon peel and egg; mix until all flour is dampened.

6Beat 2 minutes.

7Pour batter over pineapple. Bake at 350° for 30 to 35 minutes or until done.

8Let stand 10 minutes; invert on plate.
