Pineapple Upside-Down Cake

  • 2 Tbsp. butter
  • 1/2 c. brown sugar
  • 4 canned pineapple slices, halved
  • 1/3 c. shortening
  • 1 1/4 c. self-rising flour, sifted
  • 1/2 c. sugar
  • 1/2 c. pineapple juice
  • 1/2 tsp. grated lemon peel
  • 1 egg

    Melt butter in an 8 x 8 x 2-inch pan.

    Stir in brown sugar. Arrange pineapple in mixture.

    Stir shortening to soften.

    Stir in dry ingredients.

    Add juice, lemon peel and egg; mix until all flour is dampened.

    Pour batter over pineapple. Bake at 350° for 30 to 35 minutes or until done.
