- 1/4 c. butter or margarine
- 1/4 c. firmly packed brown sugar
- 1 (8 1/4 oz.) can sliced pineapple
- 1 egg
- 1/3 c. milk
- 1 pkg. Martha White blueberry muffin mix
Directions

1Heat oven to 350°.

2Melt butter in 8-inch round cake pan; stir in brown sugar.

3Arrange pineapple rings in cake pan.

4(Place whole slice in center, surround with half slices.) Lightly beat egg in mixing bowl.

5Add milk and muffin mix; stir just until blended.

6Spread batter over pineapple.

7Bake 25 to 30 minutes. Turn out onto serving plate immediately.
