Pineapple Upside-Down Cake

- 1 (17 oz.) can sliced pineapple
- 6 Tbsp. butter
- 1 c. brown sugar
- 2/3 c. shortening
- 1 c. sugar
- 2 eggs
- 2 tsp. vanilla
- 2 c. flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
Directions

1Drain pineapple; save juice.

2Melt butter in pan (iron skillet).

3Add brown sugar and 1 tablespoon of juice.

4Add syrup to water to make 1/2 cup; set aside.

5Arrange pineapple in bottom of pan.

6Cream together the shortening and sugar until light and fluffy.

7Add eggs and vanilla.

8Beat until fluffy.

9Sift together the flour, baking powder and salt.

10Add to creamed mixture alternately with the 1/2 cup reserved pineapple juice, beating after each addition.

11Spread over pineapple.

12Bake at 350° for 40 to 45 minutes.

13Cool 5 minutes.

14Invert plate.

15Serve warm.
