Pineapple Upside-Down Cake

- 1/2 stick butter or margarine
- 1/2 c. brown sugar
- 4 or 5 slices pineapple or 1 (No. 2) can crushed pineapple
- 1 c. sugar
- 1 c. self-rising flour
- 3 eggs, separated
- 5 Tbsp. pineapple juice
- maraschino cherries (optional)
- chopped pecans (optional)
Directions

1Preheat oven to 350°.

2Melt butter and brown sugar in a 9 x 9 x 2-inch skillet.

3Beat sugar and egg yolks until light.

4Blend alternately with the pineapple juice and flour.

5Beat egg whites and fold in.

6Place pineapple (and cherries and pecans, if desired) in the melted butter and sugar in skillet.

7Pour batter over this.

8Bake for 30 to 40 minutes, until tester inserted in center comes out clean.

9Cool for a few minutes, then invert skillet onto cake plate.
