  • 2 lb. kidney or pea beans
  • 2 c. sugar
  • 2 tsp. salt
  • 2 Tbsp. bacon fat
  • scant 1/4 tsp. baking soda
  • pinch of ginger
  • heaping tsp. dry mustard
  • 2 Tbsp. molasses
  • 1/2 lb. salt pork
  • onion

    Soak beans overnight.

    Parboil about 1 hour.

    Drain off liquid and pour boiling water over beans.

    Put in bean pot.

    Add all ingredients and cover with hot water.

    Bake in slow oven (250° to 275°) all day.
