  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 c. flour
  • 1 tsp. baking powder
  • 3 eggs
  • butter (size of 2 walnuts)
  • sliced pineapple
  • maraschino cherries
  • 1/2 c. pineapple juice

    Melt the butter with the brown sugar.

    Place sliced pineapple in brown sugar mixture.

    Place cherries in center of pineapple slices.

    Make batter of flour, baking powder, white sugar, pineapple juice and egg yolks.

    Beat egg whites until stiff and add to batter.

    Pour the batter over the pineapple slices and bake at 350° for about 30 minutes.
