- 1 (20 oz.) can crushed pineapple in syrup
- 3 c. cooked mashed yams (about 1 1/4 lb.)
- 3 eggs
- 2/3 c. whipping cream (unwhipped)
- 1/2 c. butter or margarine, softened
- 1/4 c. brown sugar, packed
- 1 Tbsp. fresh grated orange peel
- 1/2 tsp. mace
Directions

1Drain and discard 1 cup syrup from pineapple.

2Beat yams with remaining ingredients until smooth.

3Stir in pineapple.

4Pour into greased 2-quart casserole dish.

5Bake in a 375° oven for 50 to 60 minutes until puffed and lightly browned.

6Serve with pork or poultry.
