Pineapple Zucchini Bread

  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. Crisco oil
  • 2 c. zucchini, grated
  • 1 c. crushed pineapple, drained
  • 1 c. chopped walnuts
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. baking powder

Directions

    Beat together eggs, sugar, vanilla and oil.

    Add zucchini, pineapple and walnuts.

    Stir together 3 cups flour, soda, salt and baking powder.

    Fold into egg mixture to combine.

    Divide between two 4 x 9-inch greased loaf pans.

    Bake at 325° for an hour, or until done.
