Pineapple Zucchini Bread

  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 c. cooking oil
  • 2 c. zucchini, peeled and grated
  • 3 c. flour
  • 1 tsp. baking powder
  • 1/2 c. raisins
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 c. nuts
  • 1 c. crushed pineapple, drained

Directions

    Beat eggs until fluffy; add sugar, vanilla, oil and zucchini. Add dry ingredients and mix well.

    Stir in pineapple, raisins and nuts.

    Put in one loaf pan or 2 small loaf pans.

    Bake at 325° for 1 hour.

    Remove when brown.
