  • 3 beaten eggs
  • 2 c. sugar
  • 1 c. oil
  • 3 tsp. vanilla
  • 2 c. shredded and drained zucchini
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 (8 oz.) can crushed pineapple (not drained)
  • 1 c. chopped nuts

Directions

    Beat eggs well, then beat in sugar, oil and vanilla.

    Mix dry ingredients and stir into egg mixture.

    Grease and flour two 9 x 5-inch loaf pans or 3 smaller ones.

    Bake at 350° for 1 hour plus.
