- 3 beaten eggs
- 2 c. sugar
- 1 c. oil
- 3 tsp. vanilla
- 2 c. shredded and drained zucchini
- 3 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 (8 oz.) can crushed pineapple (not drained)
- 1 c. chopped nuts
Directions

1Beat eggs well, then beat in sugar, oil and vanilla.

2Mix dry ingredients and stir into egg mixture.

3Grease and flour two 9 x 5-inch loaf pans or 3 smaller ones.

4Bake at 350° for 1 hour plus.
