- 1 cup sugar
- 1/4 cup butter, softened
- 1 egg, well beaten
- 2 cups pinto beans, cooked & mashed
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon allspice
- 2 cups apples, peeled & diced
- 1 cup pecans, chopped
- 1 teaspoon vanilla
Directions

1Preheat oven to 375 degrees.

2Cream sugar and butter.

3Add eggs and mashed pinto beans and mix well.

4Sift together dry ingredients and add to sugar mixture.

5Stir in apples, nuts and vanilla.

6Pour into greased Bundt pan and bake for 45 minutes.
