- 1 tablespoon oil
- 1 cup onion
- 1/2 cup celery
- 1/2 cup green pepper
- 2 garlic cloves
- 1 cup salsa
- 1 cup tomato sauce
- 1 cup bulgur
- 1/2 teaspoon thyme
- 1/4 teaspoon cayenne pepper
- 1/2 cup vegetable broth
- 1 (14 1/2 ounce) can pinto beans
- 1 (11 ounce) can corn
Directions

1Warm oil over medium-high heat. Add onions, celery, green peppers, and garlic. Cook 4-5 minutes.

2Stir in salsa, tomato sauce, bulgur, thyme, cayenne, and 1/4 c veggie broth. Bring to a boil, then reduce heat to low and simmer, covered, 10 minutes.

3Stir in beans, corn, and remaining stock. Cover and simmer 10 more minutes, until bulgur is cooked.
