  • 1 c. pinto beans
  • 1 tsp. vanilla
  • 1 Tbsp. bean juice
  • 1 c. chopped pecans
  • 1 small can coconut
  • 4 eggs, beaten
  • 3 c. sugar
  • 2 sticks melted butter
  • 3 (9-inch) pie shells

    Mash beans and juice into paste.

    Mix together all ingredients except nuts.

    Pour into pie shells and bake at 350° for 50 to 55 minutes or until top browns.
