  • 1 c. cooked or 1 can pinto beans and liquids
  • 1 c. coconut
  • 1 c. chopped pecans
  • 4 eggs
  • 3 c. sugar
  • 1 Tbsp. vanilla
  • 1 1/2 sticks melted margarine
  • 3 unbaked pie shells (shallow)

Directions

    Combine eggs, beans and vanilla in blender.

    Blend well in a large bowl.

    Combine sugar, margarine, coconut and nuts.

    Add to bean mixture.

    Stir thoroughly.

    Pour into pie shells.

    Bake 1 hour at 300°.

    Makes 3 pies.
