Pinto Bean Soup

Ingredients
- 3 c. pinto beans
- 8 c. water
- 1 lb. ground beef
- 1 tsp. cooking oil
- 1 medium onion
- 1 large clove garlic
- 1 Tbsp. chili powder
- 1 Tbsp. dried parsley
- 1 Tbsp. dried celery
- 1 (1 lb. 2 oz.) can tomatoes
- 2 carrots
- salt and pepper to taste
Directions

1Wash beans; cover with water and bring to a boil.

2Cut heat to low and allow to simmer about 2 hours.

3Saute onion, garlic and ground beef.

4When browned, add chili powder.

5Add meat mixture, parsley, celery and tomatoes to beans.

6Return to a boil; cut heat again to low.

7Simmer for 2 hours.

8Add sliced carrots during last hour of cooking time.

9Add salt and pepper to taste.
