Pinto Bean Soup

Ingredients

  • 3 c. pinto beans
  • 8 c. water
  • 1 lb. ground beef
  • 1 tsp. cooking oil
  • 1 medium onion
  • 1 large clove garlic
  • 1 Tbsp. chili powder
  • 1 Tbsp. dried parsley
  • 1 Tbsp. dried celery
  • 1 (1 lb. 2 oz.) can tomatoes
  • 2 carrots
  • salt and pepper to taste

Directions

    Wash beans; cover with water and bring to a boil.

    Cut heat to low and allow to simmer about 2 hours.

    Saute onion, garlic and ground beef.

    When browned, add chili powder.

    Add meat mixture, parsley, celery and tomatoes to beans.

    Return to a boil; cut heat again to low.

    Simmer for 2 hours.

    Add sliced carrots during last hour of cooking time.

    Add salt and pepper to taste.
