- 4 cups dried pinto beans
- 4 slices thick slab bacon, cut into 1 inch slices
- 1 teaspoon salt
- 2 teaspoons black pepper
- chili powder
- cayenne pepper
- garlic powder
- oregano
- sour cream
- fresh cilantro
- chopped red onion
- grated cheese
- pico de gallo
Directions

1Rinse beans well and place in a large pot with the bacon; pour water over the top.

2Use enough water to cover the beans by 1-2 inches.

3Bring to a boil over med-high heat, reduce heat to low and cover; simmer 2-3 hours.

4If liquid seems to evaporate to quickly, add more water during cooking process.

5Beans are done when tender without much bite to them.

6Add salt and pepper, stir, and taste.

7Adjust seasonings as necessary, add in other seasonings as desired.

8Serve with garnishes of choice.
