  • 8 c. dry pinto beans, washed
  • 1 smoked ham hock
  • 1 large onion, chopped
  • 1/2 c. molasses or honey
  • 2 Tbsp. chile piquin
  • 3 Tbsp. garlic powder or fresh minced
  • salt to taste
  • enough water to cover beans, 3 or 4 inches

Directions

    Sort and wash beans and place them in a large pot and cover them with water.

    At this point you can let them soak overnight or cook them overnight.

    I prefer the latter.

    Add all the other ingredients, cover pot and bring to a boil.

    Then reduce heat and simmer on low heat all night or day.

    Check the water and stir occasionally.
