Ingredients
- 3 cups bread flour
- 1 1/2 Tablespoon sugar
- 1 1/2 teaspoon salt
- 4 teaspoons active dry yeast
- Add:
- 2 Tablespoon olive oil or melted butter
- 1 1/4 cups warm water
Directions

1Combine dry ingredients in large bowl of heavy duty mixer. Add oil and water. Blend for about one minute. Knead for about 10 minutes with dough hook on low to medium until dough is smooth, soft and elastic. Dough should be tacky but not sticky.

2Cover with plastic and allow to rise at room temperature until doubled in volume; about 1 to 1 1/2 hours.

3Punch dough down and divide into 8 equal pieces and roll each into a ball. Cover and let rest 20 minutes. Preheat oven to 450.

4Place baking sheet upside down on an oven rack to serve as a hearth.

5Roll each ball out thin (1/8 inch thick). Spray baking sheet with water, then place as many dough rounds as will fit without touching. Bake until dough puffs, about 3 minutes, wait 30 seconds then remove each to bread rack to cool.
