- 4 cups all-purpose flour or 4 cups whole wheat flour
- 12 teaspoon salt
- 2 tablespoons extra virgin olive oil
- 2 (1/2 ounce) envelopes active dry yeast
- 12 cup warm water
- 2 teaspoons sugar
- 1 14 cups warm water (110 degrees)
Directions

1In a two cup measuring cup, combine 1/2 cup water, yeast, and 2 teaspoons of sugar; let rest 10 minutes until foamy.

2In the bowl, mix together flour, salt, olive oil until combined.

3Make a well in the center of the mixture.

4Add the yeast mixture and 1 1/4 cups lukewarm water and mix until combined.

5Turned out on a floured surface and knead until smooth and elastic.

6About 10 minutes.

7Transfer the dough to a lightly oiled bowl, cover and let rise until doubled in size, about an hour.

8Tear off handfuls of dough, about the size of a small orange.

9Roll into 12 equal sized balls, and place on a rimmed baking sheet.

10Cover with a towel, and allow to rise, about 30 minutes.

11On a lightly floured surface, roll out the balls intro circles about 1/4 inch thick.

12Heat skillet to high heat and cook the pitas about 2-3 minutes on each side.

13Keep warm in a kitchen towel.
