  • 1 envelope Shake 'n Bake (barbecue style)
  • 1 tsp. oregano
  • 2 1/2 lb. cut up chicken
  • 3/4 c. shredded Mozzarella cheese
  • 2 large, firm, sweet red peppers
  • 2 large, firm, sweet green peppers
  • 1 (9-inch) pastry shell (purchased or homemade)
  • 1 Tbsp. olive oil
  • 1/2 c. diced red onion
  • 1/4 c. pitted Calamata olives
  • 2 Tbsp. chopped, fresh parsley
  • 1 c. cubed Feta cheese

    Heat broiler.

    Place peppers in baking pan under broiler for about 20 minutes, turning every 5 minutes or so until peppers are evenly charred.

    Remove and let stand until cool enough to handle. Peppers will be easy to peel.

    Peel and discard skin.

    Remove and discard inner seeds and core.

    Thickly slice peppers and set aside.
