  • 2 Tablespoons Finely Chopped Onion
  • 2 Tablespoons Hot Bacon Drippings
  • 1 Tablespoon All-purpose Flour
  • 1/2 cups Half-and-half
  • 1 box Chopped Spinach, Thawed And Drained
  • 1 teaspoon Salt
  • 1 pinch Black Pepper
  • 1 teaspoon Nutmeg, Grated
  • 4 whole Tortillas
  • 1/2 cups Diced Tomatoes
  • 1/4 cups Sliced Jalapenos
  • 1 cup Pepper Jack Cheese, Grated
  • 1/2 cups Sour Cream
  • 1/2 cups Salsa

    Saute onion in bacon drippings till golden brown.

    Blend in flour.

    Add half-and-half.

    Stir with fork till thickened.

    Add spinach and seasonings and blend.

    Preheat oven to 350F.

    Place tortilla shells on a baking sheet and place in the oven for about 1 to 2 minutes.
