Ingredients
- 1/2 cup oats
- 1/4 cup prepared pizza sauce
- sugar substitute, to taste (optional)
- 1 teaspoon minced garlic clove
- 3 tablespoons onions, diced
- 1/4 cup bell pepper, diced
- 1/4 cup mushroom, sliced
- 1/3 cup part-skim mozzarella cheese, shredded
- 3 tablespoons tomatoes, diced
Directions

1Prepare (slice, dice) toppings and set aside.

2Place oats in large bowl, add onions, bell peppers, mushrooms, and garlic.

3Add enough water to cover and then stir.

4Place in microwave and cook on high for about 3.5 minutes.

5Remove from microwave, add pizza sauce, and stir (if thin, heat again in microwave until desired consistency is reached).

6You can add some sweetener or sugar to the mix if you wish.

7Spread shredded mozzarella evenly over the oatmeal.

8Top with diced tomato.

9Return to microwave for 45 seconds on high, or until cheese melts.

10Allow oatmeal to cool, then enjoy!
