- 170 grams Cake flour
- 60 grams Sugar
- 100 grams Salted butter
Directions

1Bring the butter to room temperature.

3Mix with a whisk until it becomes white.

4Add sifted flour in 2 batches and fold in briskly until it is no longer floury.

5For icebox cookies, use plastic wrap to form the dough into squares and leave in the freezer for over 30 minutes to harden.

6If you are using a cookie cutter, wrap the dough and leave it in the fridge for an hour so the flavours blend.

7Then, microwave it for 20 seconds and it will be easy to roll.

8For icebox cookies, after Step 4, cut the dough into 4 mm slices and bake in a 355F/180C oven for 13-15 minutes.
