  • 170 grams Cake flour
  • 60 grams Sugar
  • 100 grams Salted butter

    Bring the butter to room temperature.

    When it has softened, add the sugar.

    Mix with a whisk until it becomes white.

    Add sifted flour in 2 batches and fold in briskly until it is no longer floury.

    For icebox cookies, use plastic wrap to form the dough into squares and leave in the freezer for over 30 minutes to harden.

    If you are using a cookie cutter, wrap the dough and leave it in the fridge for an hour so the flavours blend.

    Then, microwave it for 20 seconds and it will be easy to roll.

    For icebox cookies, after Step 4, cut the dough into 4 mm slices and bake in a 355F/180C oven for 13-15 minutes.
