Planked Salmon

Ingredients

  • 1 kg salmon fillet
  • 3 tbsp brown sugar
  • 1 tsp sea salt
  • 1 pinch ground black pepper
  • 1 zest of lime (optional)
  • 1 tbsp lime juice

Directions

    Soak a cedar plank in cold water for at least one hour , longer is better!

    Remove any pin bones from salmon, make small incisions in flesh, you can remove skin if you wish.

    Mix sugar, salt & pepper (and lime zest if using) together, sprinkle over salmon, wrap in cling film for 30 -45 minutes.

    Preheat oven to 190c , when hot place plank in oven , on a baking tray, for 5 minutes.

    Remove salmon from cling film and place ,skin side down,on plank, drizzle with any liquid, sprinkle on lime juice.

    Place in oven for 25-30 minutes until cooked, should be slightly pink in the middle.

    Serve with fried potatoes and peas or green salad.
