Plum Nutty Cake

  • 3 c. self-rising flour (if plain, add 4 tsp. baking powder and 3/4 tsp. salt)
  • 3 c. sugar
  • 3/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3/4 tsp. cloves
  • 5 eggs
  • 3 small jars baby plums, strained
  • 1 1/2 c. vegetable oil
  • 1 c. chopped nuts

    In large bowl, mix dry ingredients.

    Beat in oil, eggs and plums.

    Beat with mixer 4 minutes, until well blended.

    Fold in nuts.

    Makes 1 tube pan cake or 2 large loaves and 4 small loaves. Bake at 325° for 1 1/4 hours (less for small loaves).
