- 2 c. plus 2 Tbsp. all-purpose flour
- 1 c. granulated sugar
- 1 tsp. baking powder
- 1/8 tsp. salt
- 3/4 c. chilled butter or margarine, cut in small pieces
- 1 egg
- 2 Tbsp. rum or lemon juice
- 1 tsp. grated lemon peel
- 2 lb. prune plums, cut in wedges
- 1 tsp. ground cinnamon
- whipped cream (optional)
Directions

1Crust:

2Mix 2 cups flour, 1/4 cups sugar, baking powder and salt in a medium bowl.

3Cut in butter until particles resemble coarse crumbs.

4Beat egg with rum and lemon peel.

5Add to flour mixture.

6Mix quickly with fingers to form a smooth dough.

7Press dough in bottom and 1-inch up sides of 9-inch spring-form pan (dough should be at least 3/8-inch thick around sides).

8Flute edge, if desired.
