- 1 1/2 c. water or skim milk
- 3 Tbsp. lemon juice
- 1 bay leaf
- a few cloves or peppercorns
- 1 lb. fish fillets or steaks of your choice
Directions

1Stir together water, lemon juice, onion and seasonings in a large skillet.

2Bring to a simmer.

3Add fish; cover and adjust heat to maintain a simmer.

4Cook 10 minutes per inch of thickness of thickest part of fish, probably 5 to 10 minutes.

5Fish is done when it is opaque and flakes easily with a fork.

6Don't overcook or it becomes tough and dry.

7Serve hot with sauce or lemon juice or cold in chunks in salad.
