- 1 lb ground beef
- 34 cup water
- 1 14 ounces taco seasoning
- 14 cup butter, softened
- 14 cup sugar
- 1 egg
- 1 34 cups flour
- 4 teaspoons baking powder
- 14 teaspoon baking soda
- 14 teaspoon salt
- 1 cup buttermilk
- 1 cup salsa
- 1 cup cheddar cheese, shredded
Directions

1In a skillet, cook the beef over medium heat until no longer pink; drain.

2Add water and taco seasoning; simmer, uncovered for 15 minutes.

3Cool.

4In a mixing bowl, cream butter and sugar.

5Beat in egg.

6Combine dry ingredients; add to the creamed mixture alternately with buttermilk.

7Fold in meat mixture.

8Fill greased muffin cups two-thirds full.

9Bake at 350F for 12 to 15 minutes or until golden brown.

10Carefully remove muffins to a greased 13x9-inch baking dish.

11Top each with salsa and cheese.

12Bake 5 minutes longer or until the cheese is melted.
