  • 2 quarts water
  • 1 large onion, quartered
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 1/2 pounds grouper fillets, cut into serving-size pieces
  • Fresh parsley sprigs

Directions

    Combine water, onion, salt, and pepper in a large Dutch oven, stirring well. Bring mixture to a boil; add fish, and cook 15 minutes or until fish flakes easily when tested with a fork. Remove from heat.

    Transfer fish and onion to a serving platter using a slotted spoon. Garnish platter with parsley sprigs, and serve with fish stock, if desired.
