- 1 lb. orange roughy fillets
- 1/4 c. chopped celery
- 1/2 c. sliced onions
- 2 tsp. olive oil
- 1 (16 oz.) can whole tomatoes, coarsely chopped
- 1/8 tsp. pepper
- 1 lemon, sliced
- 1 bay leaf
- 1/4 c. water
- 1/2 tsp. sugar
- 1 Tbsp. cider vinegar
- 1 Tbsp. white wine
Directions

1Rinse fish and pat dry.

2Cook celery and onion in oil until tender.

3Sprinkle with pepper.

4Cover fish with tomato and lemon slices.

5Combine water, sugar, vinegar, wine and bay leaf.

6Pour over fish mixture.

7Cover and simmer 8 to 10 minutes.
