- 1/2 c. dry white wine
- 2 Tbsp. chopped shallots or onion
- 1 small lime, sliced
- 1 jalapeno pepper, sliced
- 1 lb. red snapper fillets
Directions

1Stir wine, lime and jalapeno in a 12-inch skillet.

2Add red snapper.

3Add enough water to cover fillets.

4Heat to a simmer over low heat.

5Cook fillets 8 to 10 minutes or until fish flakes easily with a fork.

6Remove from liquid and serve.
