Poached Trout(Serves 2)

  • 2 fresh trout, whole and cleaned, about 1/2 lb. each or two fillets, about 1 to 1 1/2 lb. total
  • 1/3 c. milk
  • 1/3 c. water
  • 4 to 5 slices lemon
  • 1/4 to 1/2 tsp. allspice
  • 1/4 tsp. salt
  • couple sprigs parsley

Directions

    Place fish in skillet just large enough to hold both.

    Add combined milk, water, lemon slices, spice, salt and parsley.

    Cover and cook over low heat, 20 to 25 minutes, until just tender and flaky to a fork test.

    With large spatula, carefully remove to warm platter; garnish with lemon slices.

    Pour Caper Sauce over all and serve immediately.
