  • 1 poblano pepper finely chopped
  • 1 cup white wine
  • 2 1/8 cups cheddar cheese grated
  • 2 1/8 cups mozzarella cheese grated
  • 2 1/8 cups goat cheese crumbled
  • salt
  • freshly ground pepper
