1Bring a pot of water to a low boil. Add cornmeal to the boiling water a handful at a time by letting it sift through your fingers, stirring with your other hand as you do this. Keep stirring and adding cornmeal until the polenta reaches a consistency heavy enough to hold a wooden spoon upright in the pot. Add salt and pepper to taste. The consistency may vary according to the dish you are serving it with or your personal taste. You may like it firmer with a tomato sauce or, if you serve it with game, you may want it softer. If you have polenta with mushrooms or vegetables, which are more delicate, it is good almost runny.
