- 3- 1/2 cups Chicken Stock
- 1 cup Polenta
- 1/4 cups Grated Parmesan Cheese
- 2 Tablespoons Salted Butter
- Salt And Pepper
- 1 Tablespoon Extra Virgin Olive Oil
- Herbs, For Garnish (optional)
Directions

1Place stock in a medium sauce pan and bring to a boil.

2Once it is boiling, gradually whisk in the polenta, doing it slowly to avoid getting clumps.

3Cook the mixture 2-3 minutes or until it starts to thicken.

4Once the polenta is thickened, remove it from heat and add the parmesan cheese, butter, salt, and pepper.

5Lightly grease a 8x8 baking pan (really, any would work as long as it had sides so the mixture doesnt slide off) with Pam.

6Pour mixture onto pan and spread out evenly.

7Put the pan in the refrigerator for 30 minutes or until firmed.

8Preheat the oven to 425 degrees F.

9Brush the polenta mixture with extra virgin olive oil and cut into strips about 2 inches wide.

10Bake in the oven for 20-25 minutes or until golden brown.

11Garnish with your favorite herbs.
