Ingredients
- 1 red capsicum
- 1/2 red onion
- 4 large field mushrooms
- 1/2 cup pasta sauce
- 3/4 cup instant polenta
- 2 cups vegetable stock
- 1/2 cup milk
- 1/2 cup parmesan cheese
- salt and pepper
Directions

1Preheat oven to 200°C.

2Slice veggies and layer in a small baking dish.

3Combine milk and stock in a small pot and heat till simmering.

4Pour in polenta in a thin stream.

5Stir constantly with wooden spoon.

6Polenta will thicken within 5 minutes to resemble porridge.

7Add more stock or water if it seems too thick.

8Stir in parmesan, remove polenta from heat.

9Pour polenta ovee veggies in baking dish.

10Sprinkle top with extra parmesan.

11Bake 30 minutes, cover with foil if it seems to be getting too brown.

12Serve with pasta sauce poured over the top.
