  • 5 or more medium-sized beets
  • 2 sour apples
  • 1 tsp (5 ml). bacon fat
  • 2 tbsp (30 ml) to 3 tbsp (45 ml). sour cream
  • 1-1/2 tbsp (20 ml). flour
  • salt and pepper to taste
  • lemon juice to taste
  • sugar to taste

Directions

    Peel beets and apples and grate coarsely, reserving all the juices.

    Melt bacon fat.

    Add grated beets and apples and their juices.

    Season with salt and pepper, and add lemon juice and sugar to taste.

    Simmer, covered, for 30 minutes.

    Remove cover and reduce liquid.

    Combine flour with sour cream then add and let bubble up.

    Simmer a few more minutes.
