Polish Pickle Soup

Ingredients
- 1 gal. water
- 3 lb. pork hocks (shanks)
- 1 small diced onion
- 1 sliced potato
- 1/4 head cabbage, coarsely chopped
- 1 c. sliced carrots
- 1/3 c. pickle juice
- 2 kosher dill pickles, chopped
- 1 tsp. dill weed
- 1 tsp. pepper
Directions

1Put water in kettle and then add pork hocks and onion.

2Cook 1 hour.

3Remove pork hocks and cool.

4When cooled, dice meat and set aside.

5Add potato, cabbage and carrots to kettle.

6Cook until tender.

7Then add pickle juice, pickles, dill weed, pepper and diced meat.

8Cook until heated through.

9Serves 6 to 8.
