Polynesian Salad

Ingredients

  • 3/4 c. peanut oil
  • 3 Tbsp. fresh lemon juice
  • 3/4 tsp. honey
  • 6 Tbsp. soy sauce
  • 2 1/2 Tbsp. grated onion
  • 8 c. washed, trimmed spinach, romaine or combination, torn into bite size pieces
  • 1 1/2 c. bean sprouts
  • 8 oz. canned water chestnuts, drained, sliced or chopped
  • 1/2 c. washed, thinly sliced radishes
  • 3 Tbsp. sesame seed, toasted*

Directions

    In bowl, blender or food processor, combine oil, soy sauce, lemon juice, onion and honey and mix well.

    In large salad bowl combine greens, sprouts, water chestnuts, radishes and sesame seed.

    Pour dressing over and toss to coat.

    Serve immediately.
