  • 2 teaspoons sesame oil
  • 1 medium sweet potato, cubed
  • 3 or 4 chicken thighs (1/2 to 3/4 pound)
  • Sea salt and freshly ground white pepper
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1/2 head broccoli, cut into florets (about 2 cups)
  • One 15-ounce can diced tomatoes (not drained)

    Preheat the oven to 450F.

    Wipe the inside and lid of a cast-iron Dutch oven with sesame oil.

    Scatter the sweet potato in the pot.

    Top with the chicken and lightly season with salt and pepper.

    In a small bowl, whisk the pomegranate molasses, peanut butter, and soy sauce.

    Pour over the chicken.
