  • 1 1/4 lb. beef or pork liver
  • 2 Tbsp. bacon fat
  • salt and pepper
  • 5 medium onions
  • 5 medium potatoes
  • 5 slices bacon

    Cut liver into serving sizes.

    Brown both sides in fat. Sprinkle with salt and pepper.

    Put liver and drippings into a large casserole.

    Add onions and potatoes; sprinkle with more salt and pepper.

    Top with bacon slices.

    Cover casserole and bake at 350° for 1 hour.

    Then uncover and bake 15 minutes longer to crisp bacon.
