- 1 14 cups all-purpose flour
- 12 teaspoon salt
- 2 eggs
- 1 14 cups milk
Directions

1Mix flour and salt together in a medium bowl.

2Make a well in the center of flour mixture.

3Beat eggs slightly and add in 1/2 cup milk.

4Gradually work this into the flour, whisking until it's smooth.

5Whisk in the remaining milk.

6(At this point if you'd like a cheese popover, add 1/2 cup freshly shredded Parmesan and a dash of cayenne.)

7Cover bowl with plastic wrap and refrigerate for 30 minutes.

8Heat oven to 450 degrees.

9Preheat popover pan for 10 minutes.

10When hot, brush popover cups with softened butter.

11Fill cups 2/3 full.

12Bake at 450 degrees for 15 minutes.

13Reduce heat to 350 degrees and bake for 10-15 minutes longer.

14Note: Do not open oven door until popovers are done.

15The cool air will drop the temperature quickly and they'll collapse.
